I ain’t no Master Chef but I love to cook..

This is prolly the first time I blog about this particular hobby of mine. But, yea I love to cook.

However, I am not a master chef and I am not big on making everything from scratch. I agree it will taste better, more authentic and fresher. Maybe one day I will decide to be a cooking nazi.. but these days.. everyone is busy. Unless I am hosting a party, if meal preparation takes more than 30 mins, I’ll opt for take away. I am happy to wait one to two hours maybe three for a meal.. as long as it’s cooking in the oven or simmering on the stove and I can do something else.

Still, I take enormous pleasure from making delicious food, eating them and feeding them to my bunny.

My secret desire is that I can eat as much as I can without getting fat, diabetic, or high cholesterol. Yes, it’s in my DNA. Dad got high cholesterol, mum is diabetic. So, yea.. thanks to my parents I am in high health risk category from both side of the family.

Pat’s cooking tips:
(I hate washing up, so this is what I do)

  1. My best friend taught me to wash up while you wait (i.e. wash those cutting board while the meal is simmering).
  2. I also tend to rinse and reuse the same dish/plate/spoon/knife during meal preparation.
  3. I fit as much as possible in one cutting board.
  4. Get a dishwasher!!! Better yet, if you’re in South East Asian countries, get a maid. Sorry, a maid is too expensive in Australia – so dishwasher will have to do.

As you can see, I need to concentrate more on the food presentation and I am not a good food photographer either. Again, this is just a hobby and I do get a real good kick from making that delicious food.

I always like street magician. Street magician with an IT Gadget? Now that appeals to me… a LOT!

Might be the reason why I would get an iPad… so I can play trick with it – COOL! :)

We have a fridge situation at work – lookin.. delicious.. NOT!

I probably shouldn’t have posted this right above my delicious four layer heavenly Mexican dips.

But..

My lovely front office lady has the unenviable task of maintaining our office kitchen. This morning, she came to the kitchen.. opened the fridge door and her nose was straight away assaulted by a very offensive smell.

Upon further investigation, she found one of these must be the culprit.

Pretty much why I never put my lunch in that fridge.

Poor girl! she had to actually empty those containers outside so the kitchen doesn’t smell. She actually didn’t have to do it – she was just being very very nice. If it were me, I’ll just chuck everything in the bins – nice containers or not.

Recipe: Finger lick’n goodness – Mexican style four layer dips

Want an easy dip to make? Guaranteed to make your guests short from licking the serving platter raving about it?

Serve this Mexican style four-layer dips.

All ingredients can be found at your local supermarket. Cheap! Cheap! Perfect saviour for when you’re hosting that dinner and you realise you don’t have enough food for everyone. Fill them up with this dip as entree!!

Mexican style four layer dips

Ingredients:
(to serve four adults with appetite of a mammoth).

  • one and a half of medium sized Hass Avocado
  • 1 x 300g Sour Cream (I choose light, because the full cream one makes me sick)
  • 1 x 312g Salsa dips (hot/medium/light) – For this recipe I got the medium organic salsa dip from Aldi. But, you can get homebrand or the usual Old El Paso ones.
  • two or three handful of shredded cheese enought to cover your dips - For this recipe I got the pizza dip from Aldi (combo of light tasty cheese, mozarella)
  • Dorito chips (cheese flavoured one) to scoop – For this recipe, I use Cheese Supreme (red package) doritos.

How to make:

  1. First layer: Cut the avocado into small pieces then mash them with forks.
  2. Second layer: Use forks to mash the sour cream in the container then pour to cover your mashed avocado
  3. Third layer: Pour the salsa dips to cover your sour cream
  4. Fourth layer: Scatter the cheese over salsa dips layer – I usually leave the middle open.
    Note: You may have noticed that I missed this step in the instruction photo. I was too busy taking photos of the whole process that I forgot this fourth layer. Had to shuffle chips to the sides and then sprinkle the cheese and put the chips back on T_T).
  5. Scatter your doritos over your dipping concoction. Clean up the sides of the platters with napkin or paper towel, then serve.
